VALENTINE'S DAY EASY TRUFFLES- IF I WERE RICH?

  Up, got the dishwasher going and thinking about what to put in these heart shaped boxes I have for my  family for Valentine's Day.  We never go anywhere for Valentine's Day but I always make one of the families favorite meals and get everyone something small.  I have the boxes but wasn't sure what to put in them.  My family loves chocolate so I thought I would make something I never made before but I know they like Truffles cause when I by them at the store it is a huge treat.  I would spend a fortune to buy them already made but it is really not to expensive to make.  A single recipe makes 5 dozen!  Here is the recipe.


Easy Decadent Truffles



1 (8oz) package cream cheese (softened)
3 cups confectioners sugar, sifted
3 cups semi-sweet chocolate chips, melted
1 1/2 tsp vanilla

In a large bowl, beat cream cheese till smooth.  Gradually beat in confectioners sugar until well blended.
Stir in melted chocolate and vanilla till no streaks are left.  Refrigerate for an hour.  Shape into 1 inch balls.

Roll truffles in cocoa, confectioners sugar, ground nuts, coconut, or candy sprinkles.

  This sounds so easy but a big treat and not expensive.  This will be perfect.    For a card I know the dollar store has 2 for 1 dollar but I do not have any time to get there today so not so sure about that yet.

  I watch Carrie Underwood on tv this morning talking about her life and how it has changed since American Idol.  She said we'd be suprised how normal her and her friends are and how she doesn't feel like shes the girl that won and is now a star.  I think to myself we are all born with a talent I just wish knowing how to make do was one of the ones that earned you 30 million dollars a year.  Not that I need that crazy, have everything life but I and my family would have what they NEED if I earned that.

   I would find comfort in knowing I could make the difference in alot of families lives with a small amount of my money.  Sometimes all a family needs is one house payment made to be back on track and not have their finances spiral out of control.  I wouldn't do this big makeover a house so its out of this world high tech, I think some people just need you to come in and fix a broken toilet, fix a faucet, a leaky roof, stock the cupboards,  little things to make their everyday life comfortable.

   I would still love to be frugal but I think a few family vacations would be in order and a house (not huge) but just right and a place built in for everything.  Storage, Storage, Storage, and more Storage.  A just right pantry would be really good.

  I think when a star says they live a normal life I don't think they realize what some of our normal lives are like.  Theirs are normal on steroids!
