FRUGAL SCOOP, PEANUT BUTTER FREE NO BAKES, BANANA CAKE!!



  Just seen this on my facebook and wanted to put it on here right away because usually when I see something its when I threw the container away the day before and its to late!  This would be great for scooping potting soil (planting season right around the corner if you plant indoors first).  I am so going to do this with my buttermilk containers.  I found buttermilk marked half off because it was the day before it was the best used by date.  I bought both half gallons and froze in smaller containers.

  I am very glad that I cooked some extra this week cause today when I want to relax a little, I Can!  Of course after cleaning the kitchen.  I made a bowl of macaroni salad yesterday because it is one of the favorites in the house.  I try to make everyones favorites on Friday because then everyone is happy to stay in and eat.  I take 1 pound of macaroni noodles and boil and drain, sit aside.  I boil about 10 eggs, peel and chop.  I put both eggs and pasta in a large bowl, add 3/4 jar of  salad dressing, mustard (approx. 1/8 cup), salt, pepper, sugar (approx. 1/4 cup), and 1 med. onion chopped fine, mix well.  You can add any amount of all of the ingredients to taste.  I slice eggs on top and sprinkle with paprika for looks.  Makes a very big bowl.  This is a treat for my family!

  I made hot dogs that I found marked down to half price at the grocery store.  I find that if I go there in the evening I find alot of things marked down.  I hauled out a bag of the hotdog buns I made last week from the freezer to have with the hotdogs.    Yesterday I made peanut butter free no bake cookies(cause I am out of peanut butter) for a treat for the weekend and I made a Banana Cake with Cream Cheese Frosting also.


PEANUT BUTTER FREE NO BAKES
2 cups sugar 
3 cups oats (Quick oats will make cookie thicken up better) 
1/3 cup cocoa 
1 cup milk 
8 tbsp butter (1 whole stick)
Take a medium saucepan and mix sugar, butter, milk, and cocoa. Set your stove to medium heat.
Every few minutes stir the mix.
While your mix is boiling get your wax paper ready.
When your mix is boiling, take off heat and turn off stove. Mix in the oats.
Take a spoon and scoop out and put it on your wax paper.
Let them cool for about an hour or put in freezer for 20 minutes. Makes about 12 cookies. ENJOY!


~Banana Cake with Cream Cheese Frosting~
1 1/2 cups bananas, mashed, ripe
2 teaspoons lemon juice (optional)
3 cups flour
1 1/2 teaspoons baking soda
1/4 teaspoon salt
3/4 cup butter, softened
2 1/8 cups sugar
3 large eggs
2 teaspoons vanilla
1 1/2 cups buttermilk
Frosting
1/2 cup butter, softened
1 (8 ounce) package cream cheese, softened
1 teaspoon vanilla
3 1/2 cups confectioners sugar
*Garnish*
chopped walnuts
Directions:
Preheat oven to 275°.
Grease and flour a 9 x 13 pan (I used a Bundt Cake Pan)
In a small bowl, mix mashed banana with the lemon juice; set aside.
In a medium bowl, mix flour, baking soda and salt; set aside.
In a large bowl, cream 3/4 cup butter and 2 1/8 cups sugar until light and fluffy.
Beat in eggs, one at a time, then stir in 2 tsp vanilla.
Beat in the flour mixture alternately with the buttermilk.
Stir in banana mixture.
Pour batter into prepared pan and bake in preheated oven for one hour or until toothpick inserted in center comes out clean.
Remove from oven and place directly into the freezer for 45 minutes. This will make the cake very moist.
For the frosting, cream the butter and cream cheese until smooth.
Beat in 1 teaspoon vanilla.
Add icing sugar and beat on low speed until combined, then on high speed until frosting is smooth.
Spread on cooled cake or drizzle over if you use a bundt cake pan.
Sprinkle chopped walnuts over top of the frosting, if desired.

  I had got banana's marked down because they were over ripe but there was still some that were good in it so I let the little kids eat the ones that were good and used the ones that were over ripe for the cake and today I am going to make banana bread for now and for the freezer.  I have to make a couple loaves of bread too because I found bacon ends and pieces at the store 3 pounds for 4.99.  DEAL!!  So we are going to have BLTs for dinner tonight with homemade bread.  Yum!
